Helena's Pineapple Cookies

Our friend, Helena makes really good cookies-yummy, in fact. Today I made her Pineapple Cookies to take to a party tonight. Good thing I made a double batch-these are soooooo delicious.

Helena’s Pineapple Cookies

1 can crushed pineapple (1 lb. 4 ½ oz.) drain and save juice

3 c flour

1 tsp. soda

1 tsp. salt

½ c soft margarine or butter

½ c sugar

2 large eggs

1 tsp. almond extract

Cream butter and sugar—add eggs. Add pineapple & almond extract. In a separate bowl, mix dry ingredients. Add dries to rest of the mixture. Drop by teaspoon onto cookie sheet. Bake at 350 degrees for 10 min. Glaze while warm.

Glaze:

¼ c butter or margarine

2 c powdered sugar

3 T pineapple juice

½ c chopped walnuts

I've had her blondies and pumpkin cookies, but I haven't tried these yet. They look soooo yummy. I think we need to make some.
