Logan turned 27 on January 27th. We (family and friends) gathered a few days later for a little party to celebrate the occasion.
Although we want to wish Logan a very "Happy Birthday", this blog entry is really about the cake. You see, Logan's favorite cake is pineapple upside down cake with cheesecake pulling a strong 2nd place on his list of favorites.
A few weeks before his birthday, he made a request for a rather unusual birthday cake concoction-pineapple upside down cake for the bottom and top layers and cheesecake for the middle layer. We all had a good laugh about it but Logan was really "gung-ho" about having that as his birthday cake.
Jennilee, being the wonderful wife and mother that she is, wanted to grant him his request. She (bless her heart) baked a cheesecake and put it between a plain yellow cake layer (the bottom layer) and a pineapple upside down top layer.
Jennilee was a little rushed (due to being a busy mom of two little munchkins) and had to make the cheesecake the day of the party so it didn't really get a chance to set up.
This cake would probably not win a blue ribbon at the fair for presentation but WOW was it ever scrumptious and rich! I think Jennilee should get a blue ribbon for even attempting to make the darn thing and Logan should get a prize for dreaming it up!
