You can't have St. Patrick's Day without some good old "Oatmeal Soda Bread". I made some the other day for 2 ladies that I visit and then Brent and I finished off the other loaf!
Oatmeal Soda Bread
1-2/3 cups all-purpose flour
3/4 cup quick-cooking rolled oats
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 T. margarine or butter
1 beaten egg
2/3 bup buttermilk
1 beaten egg
Grease a baking sheet; set aside. In a large mixing bowl stir together flour, oats, baking powder, baking soda, and salt. Using a pastry blender, cut in margarine or butter till mixture resembles coarse crumbs. Make a well in center of the dry mixture. Stir together one beaten egg and buttermilk. Then add this mixture all at once to the dry mixture. Using a fork, stir just until moistened. (Dough will be sticky.)
Turn the dough out onto a well-floured surface. Quickly knead dough by gently folding and pressing dough for 10 or 12 strokes or till dough is nearly smooth. On the prepared baking sheet, shape dough into a 6-inch round loaf. On the top of the loaf, cut a 4" cross, 1/4 inch deep. Brush with the one remaining beaten egg. Bake in a 357 degree oven about 35 minutes or till done. Remove from baking sheet and serve warm. Makes 1 loaf.
